The cookbook, OTK Ottolenghi Test Kitchen, Extra Delicious, by the British chef, Yotam Ottolenghi, is a tribute to vegetables. It is food with Middle Eastern inspiration and with a twist: for example, cardamom together with vanilla, or allspice for the tomatoes, and with a final touch, which can be sour salsa or pickled herbs.
Extra delicious is about creativity, about picking and choosing, mixing and matching. It is an exploration of the special Ottolenghi via sauces and dressings, oils and pickles, sprinkles and crispy ice creams, salsas and pickles, ferments and salt preservation and basic desserts. It's all the extras that complete a meal, make an already good dish wonderfully much better.
Ottolenghi presents 75 types of side dishes and 10 desserts. The individual side dish is presented in a single recipe, and there are suggestions for other dishes where it can add the extra nuance that makes the difference.
Yotam Ottolenghi is the star chef who revolutionized green cuisine with his sense of flavor composition. In addition, he is a food writer for e.g. the English daily newspaper, The Guardian and author of a number of other cookbooks, including E nkelt, Taste and Shelf Love.
